I did get two dozen eggs cooked, and then pickled four cans of beets, also with the cooked eggs, which they all shelled nicely, except for one, some of the white broke away. I was amazed. I've always heard older eggs peel easier then fresh eggs. I also had added some salt to the water that covered the eggs. I hope the yolks stay nice and yellow. The one that part of the white broke away, I cut in half and the yolk was a very pretty yellow. I hate to see the yolks have that dark greenish color where it sits inside the white part. I did the eggs on Tuesday so by Sunday they should be nice and pickled.
I'm also going to try a new pasta salad recipe I found, along with the old stand by green bean casserole, Becky usually brings a sweet potato casserole, but I think this year she's bringing scalloped potatoes, Angela, not sure, she hasn't said, Melinda usually brings bread or hot rolls and of course the pickled eggs and beets I prepared on Tuesday. For dessert I'm going to make the Chocolate Pudding Dessert.
And I forgot the most important part, the spiral cut ham.
Becky also makes us all a bag of candy, mostly Ester Price, I told her to please not do that this year, none of us need that extra sugar.
What do you have planned for Easter Dinner?
